5 /5 Ronald Freitag: Our visit to this barbecue joint was nothing short of a culinary revelation. Its the kind of place that leaves you convinced it deserves a spot on the Texas Monthly Top 50 BBQ list. Sadly it was only Top 100.
The brisket was a masterpiece. The meat had a great pull to it, yielding just enough resistance before melting in your mouth. The smoke ring was a beautiful, deep pink that went all the way through, showing off the slow, deliberate cook time. The bark was thick and peppery, providing a perfect textural contrast to the tender meat.
The jalapeño cheddar sausage was another highlight. The spice level was spot on—just a hint of heat from the jalapeños that complemented the savory, melty cheese without overpowering it. The medium grind gave the sausage a fantastic, hearty texture.
Finally, the ribs were everything you hope for. The meat had an incredible flavor and was so tender it practically fell off the bone. The sauce was a perfect blend of sweet and tangy, enhancing the pork without masking its natural deliciousness.
This place is a true Texas barbecue gem.
